Troubleshooting
What it may be good for
The caffeine count
We list about 78 mg for an 8 oz melange. That depends on how strong the coffee is: a melange made with a single shot carries about 63 mg of caffeine, and one made with a double about 126 mg.
Milder than a cappuccino
A melange uses a milder, longer coffee than a cappuccino, so it is a good choice if you find espresso drinks too intense.
What to watch out for

A Wiener Melange is a Viennese coffeehouse classic: half a cup of coffee and half a cup of steamed milk, topped with milk foam. Milder than a cappuccino, it tastes round and soft, with a gentle coffee flavor under the milk and foam.
Origin & Story
Melange means mixture, and in Vienna it is the everyday milky coffee: half a cup of brewed coffee and half a cup of steamed milk, with a cap of milk foam on top. That is how the well-known Viennese Café Sperl describes it.
It is close to a cappuccino, but the coffee is milder, so the drink is gentler and the milk is more present. It is not the same as a Franziskaner, which is espresso topped with whipped cream, or the French café viennois, which is also espresso with whipped cream. A Kapuziner, another Viennese drink, takes its name from the brown robes of the Capuchin friars, like the cappuccino. Some commercial versions of the melange are blended with cocoa, but the traditional drink does not need it.
Vienna's coffeehouses are part of the city's identity. Since 2011 Viennese coffeehouse culture has been listed in Austria's national inventory of intangible cultural heritage. A traditional coffeehouse serves coffee on a small tray with a glass of water, and lets you keep your table for as long as you like.
At home, a close version is easy to make. Pull a single shot, 9 g of coffee into about 18 g, lengthen it with about 100 ml of hot water for a milder cup, and add about 120 ml of steamed milk with a cap of foam. Cafés vary, and the old way uses brewed coffee instead of espresso.

How much caffeine is in Viennese Melange Coffee?
One serving, 8 oz cup (240ml), contains approximately 78 mg of caffeine.
What temperature should I use for Viennese Melange Coffee?
Brew the base at 93°C (199°F). Where the milk is heated, 60–65°C is the target; past about 70°C it tastes scalded and loses its sweetness.
How long should Viennese Melange Coffee be extracted?
Timing: 0:25-0:30 extraction, then lengthen. Method: Espresso Machine. Ratio: 9g in, 18g out, lengthened with 100ml hot water, plus 120ml steamed milk. Grind or leaf format: Fine (espresso).
Why does my Viennese Melange Coffee taste bitter?
In a milk drink, bitterness comes from the base (espresso pulled too long or tea steeped too long) or from scorched milk. Brew the base to the stated proportion, and if the milk is heated, stop at 60–65°C.
What is the difference between a melange and a cappuccino?
A melange is made with a milder coffee, about half coffee and half steamed milk with foam on top. A cappuccino is made with espresso and tastes stronger.
What is a Franziskaner?
A Viennese coffee made with espresso and whipped cream rather than milk foam. It is sometimes ordered by mistake when someone wants a melange.
Who should avoid Viennese Melange Coffee?
Caffeine affects everyone differently. If you are pregnant or nursing, sensitive to caffeine, or have been told to limit it, check with your doctor about how much is right for you.
