Origin & Story
Cajamarca is in northern Peru, and its coffee grows at roughly 1,600 to 2,000 meters, where the cool mountain air slows the cherries and concentrates their sugars. The best-known coffee districts lie in the provinces of Jaén and San Ignacio, close to the Ecuadorian border, where places such as Huabal, Chirinos and Tabaconas have become sought-after origins.
This is smallholder country. Most families grow coffee on a few hectares of steep slope, alongside food crops, fruit trees and shade forest. To reach buyers abroad they work through cooperatives, and the best known is Cenfrocafe, founded in 1999 with 220 small farmers and now serving more than 2,000 members across the provinces of Jaén, San Ignacio and Bagua.
Cenfrocafe's model is organic and Fair Trade. About 92 percent of the coffee it markets is certified organic, and all of it qualifies as Fair Trade. Its varieties are the classics of Peru: Bourbon, Typica and Caturra.
Peru began exporting coffee in 1887, and today it is among the world's larger exporters of arabica, with about three quarters of its growing area lying between 1,000 and 1,800 meters. Cajamarca's high, cool farms are among the reasons its coffees taste so sweet and clear.
Washing gives the cup its clarity. Expect apple and caramel up front, jasmine as it cools, and a clean almond finish.
