Pour-Over Bloom Timing: Gas, Agitation, and Extraction
The bloom is the first small pour, made before the main brew, and it exists for a specific chemical reason rather than as ceremony.
What is happening
Roasting produces carbon dioxide, which stays trapped in the bean and is released once it is ground and wetted.
That escaping gas physically pushes water away from the coffee. Pour a full brew onto fresh coffee without blooming and the water channels around gas pockets, wetting the bed unevenly and under-extracting large parts of it.
The bloom lets the bulk of that CO2 escape first, so the main pour meets a saturated, settled bed.
How much water and how long
Roughly two to three times the coffee weight in water. For 18g of coffee, 36-54g.
Enough to wet everything without so much that liquid starts draining through immediately.
30 to 45 seconds suits most coffee. Watch rather than count: the bloom is finished when the dome stops rising and begins to settle or crack.
Freshness changes everything
This is the part that trips people up. Bloom vigour is a direct indicator of how recently the coffee was roasted.
- Very fresh (under a week): dramatic rise, may need 45 seconds or a slightly larger bloom
- Ideal (1-4 weeks): visible dome, settles around 30-40 seconds
- Stale (over a month): little or no rise
A coffee that does not bloom is telling you something useful, and no timing adjustment fixes it.
Stirring or swirling
A gentle swirl of the brewer during the bloom, or a light stir, ensures dry pockets get wetted. Dry grounds contribute nothing to extraction, and on a conical brewer they are common at the edges.
This is a genuine improvement and one of the easiest to adopt.
Water temperature
Use the same temperature as the main brew. Some people bloom cooler on the theory that it is gentler; there is little to support it and it complicates a step that works well simply.
When you can skip it
Very stale coffee has no gas left to release. Cold brew does not bloom meaningfully. Immersion methods where you stir thoroughly achieve the same saturation by other means.
For fresh coffee in a percolation brewer, blooming is the single highest-return 30 seconds available.

Roughly 95 mg per typical serving, against about 95 mg for an eight-ounce cup of brewed drip coffee. Actual content varies with dose, temperature and contact time.
Why does my pour-over bloom timing taste bitter?
Bitterness almost always indicates over-extraction. Shorten the contact time, lower the water temperature slightly, or use a coarser grind or less leaf — changing one variable at a time so you can tell which was responsible.
How should I store it?
Airtight, opaque, cool and dry, away from strongly aromatic foods. Buy quantities you will finish while fresh; freshness affects the cup more than most technique adjustments.
