Kenya purple tea is one of the more distinctive products of the global tea renaissance, and it is still unfamiliar enough that most people who encounter it do not know what to expect. The plant — a purple-leafed variant of Camellia sinensis called TRFK 306/1, bred at the Tea Research Foundation of Kenya — produces leaves that contain significant concentrations of anthocyanins, the same pigments that give blueberries and red grapes their colour. These compounds are absent in meaningful quantities from conventional green and black tea, and they give purple tea its characteristic appearance, flavour and a set of proposed health properties that are currently being actively researched.

The flavour of purple tea sits somewhere between green and black: less grassy and vegetal than green, less astringent and brisk than most black teas, with notes that range from floral and honey to slightly sweet and herbal. Purple tea is Camellia sinensis like any other tea, but the TRFK 306/1 variety contains anthocyanins that give it a different chemistry, a different appearance and a different flavour profile from conventional green and black tea. Kenya is the primary commercial producer of purple tea. The high-altitude tea-growing regions of Kenya — particularly around Kericho — provide the right growing conditions for the TRFK 306/1 variety. Small quantities are grown in Rwanda and Malawi using similar varieties.

Brewing

Purple tea is more forgiving than conventional green tea. Water at 80–85 °C (176–185 °F) extracts the anthocyanins and flavour without excessive bitterness. A standard 3–4 minute steep is appropriate for most preparations. Purple tea can be brewed multiple times, with subsequent steeps revealing different aspects of the flavour.

A repeatable starting method

  1. Brew purple tea with water at 80–85 °C, not the 75–80 °C typically recommended for delicate green teas. The slightly higher temperature helps extract the anthocyanins and the full flavour.
  2. Use 2–3 grams of leaf per 200 ml of water. Purple tea is more forgiving of over-steeping than conventional green tea but still benefits from attention to time.
  3. Steep for 3–4 minutes for the first infusion. Note the purplish tint in the liquor and the flavour — floral, honey, with less bitterness than expected from green tea.
  4. Try a second steep at the same temperature with a slightly longer time. Purple tea often reveals more complexity in subsequent infusions.
  5. Compare the same purple tea processed as green and as black if you can find both, to understand how processing changes the cup.

Note the leaf weight, the water temperature, the vessel and the length of each steep separately. Tea changes across infusions, so a single averaged impression hides most of what the leaf actually did.

When it goes wrong

  • Harsh, mouth-drying — Steeped too long Pull it at 3 minutes, or add milk which softens tannin.
