Home Water Filtration for Coffee: TDS, Hardness and Why Magnesium Matters

Water is the largest ingredient in any cup of coffee — typically 98–99% by weight — yet many coffee enthusiasts pay less attention to their water than to their beans. The mineral content of water affects extraction, flavour and equipment longevity in ways that are well-documented in coffee science. Understanding TDS (total dissolved solids), hardness, alkalinity and the role of specific minerals helps you choose a filtration system appropriate for your local water.

The goal of water filtration for coffee is not to remove all minerals; it is to achieve the right balance. Pure distilled water produces flat, under-extracted coffee because it lacks the minerals that help extract flavour compounds. Heavily mineralised water produces inconsistent extraction, scale buildup and off-flavours. The sweet spot is moderate mineral content, low alkalinity and a balanced ratio of calcium to magnesium.

The principle behind home water filtration for coffee

Coffee brewing water should have moderate total hardness (50–175 ppm CaCO₃), low alkalinity (40 ppm or below) and a neutral to slightly acidic pH. Magnesium is particularly beneficial for extraction; calcium is also beneficial but contributes more to scale. Reverse osmosis with re-mineralisation, or simple carbon filtration of suitable tap water, can achieve these targets.

Three things are easy to confuse here, and separating them saves a lot of wasted coffee. Strength is how concentrated the cup is. Extraction is how much the water pulled out of the grounds. Preference is whether you like the result. A stronger cup is not a better-extracted one, and the recipe a cafe uses is not automatically the recipe your grinder wants.

What most changes the result

TDS (total dissolved solids)

The total mineral content of water, measured in parts per million. Coffee brewing water should have TDS of approximately 75–250 ppm. Below this range, extraction is weak; above, scale risk increases.

Hardness

The concentration of calcium and magnesium ions. Moderate hardness (50–175 ppm CaCO₃) is ideal for coffee. Very soft water produces flat coffee; very hard water produces scale.

Alkalinity

The water's ability to resist pH change, primarily from bicarbonate. High alkalinity (>40 ppm) buffers extraction and produces a flat, dull cup. Low alkalinity allows extraction to proceed more efficiently.

Magnesium vs calcium

Both contribute to extraction, but magnesium is more efficient per ppm. Water with a higher magnesium-to-calcium ratio tends to produce more vibrant, complex cups.

pH

Neutral to slightly acidic (6.5–7.5) is ideal. Highly alkaline water (>8.5) produces flat, dull cups and is hard to correct.

A repeatable starting method

  1. Test your tap water. TDS and hardness can be measured with inexpensive meters; full mineral profiles are available from local water utilities or commercial water testing services.
  2. Choose a filtration system based on your starting water. Carbon filtration is sufficient for moderately hard, low-alkalinity water. Reverse osmosis with re-mineralisation is needed for very hard or very alkaline water.
  3. Use re-mineralised RO water or appropriate bottled water for brewing. Distilled water is too pure; spring water varies widely; re-mineralised RO provides consistent results.
  4. Maintain the filtration system. Carbon filters need periodic replacement; RO membranes need replacement every 1–3 years depending on use.
  5. Consider the impact on equipment. Hard water produces scale in boilers, heating elements and pipes. Filtration extends equipment life.

Write down the dose, the water weight, the temperature and the total time, then one honest word for the cup. "Sour", "dry", "thin" and "heavy" are all useful when they describe a specific brew. Change one number and run it again.

When it goes wrong

Common mistakes

  • Using distilled or zero-mineral water. The lack of minerals produces flat, under-extracted coffee.
  • Over-filtering tap water. Removing all minerals is not the goal; achieving the right balance is.
  • Ignoring alkalinity. Many waters with appropriate hardness have high alkalinity, which buffers extraction and produces dull cups.
  • Neglecting filtration maintenance. Old, exhausted filters can produce worse water than unfiltered tap.

Filter your brewing water to achieve moderate hardness (50–175 ppm), low alkalinity (40 ppm or below) and a balanced mineral profile. Use carbon filtration for suitable tap water, or reverse osmosis with re-mineralisation for harder or more alkaline water. Test your water and adjust your filtration accordingly.

One caveat on caffeine: brewing method and roast colour tell you very little about the dose. A large cold brew can carry several times what a single espresso does. Use the figure for the specific product rather than for the category.
