Coffee Water Minerals: A Practical Home Recipe

Water is roughly 98% of brewed coffee, and its mineral content changes extraction as much as grind does.

Why pure water makes bad coffee

Minerals bind to flavour compounds and carry them into solution. Distilled or reverse-osmosis water has almost nothing to bind with, so extraction is inefficient and the cup reads thin and hollow no matter how you adjust dose or grind.

This surprises people who assume purer is better. For coffee it is measurably not.

The two properties that matter

Hardness — mainly magnesium and calcium. Magnesium is particularly effective at extracting compounds associated with sweetness and fruit. Calcium contributes body and also forms scale.

Alkalinity — mainly bicarbonate. This buffers acidity, neutralising the bright, fruity acids you may have paid for. High-alkalinity water makes even a lively coffee taste flat.

The two are often confused. You want moderate hardness and low alkalinity, which is a combination many tap supplies do not provide.

Practical routes, cheapest first

A carbon filter jug. Removes chlorine and some hardness. Chlorine is detectable at very low concentrations and flattens aroma noticeably, so this is the highest-return cheap change available.

Bottled water with a published analysis. Read the label against the table above. Many popular mineral waters are far too hard — some exceed 500 mg/L TDS.

RO or distilled plus a mineral concentrate. Full control and consistency. This is the route competition brewers take, and sachets designed for the purpose are widely available.

A caution about DIY recipes

Home recipes using Epsom salt and bicarbonate circulate widely and work, but they need accurate scales and care. Getting the proportions wrong produces water that is worse than your tap.

If you go this way, follow a published recipe precisely rather than approximating.

Espresso machines specifically

Scale is what kills heated equipment. If you own a machine with a boiler, water treatment is not only about flavour — it determines whether the machine lasts five years or fifteen.
