Affogato

An affogato is a shot of hot espresso poured over cold gelato. It is a dessert, and its whole character comes from a temperature collision.

What is actually happening

Hot espresso at around 65-70C meets gelato at roughly -12C. The surface melts immediately, forming a sauce of coffee and cream while the interior stays frozen.

That contrast — hot and cold, bitter and sweet, liquid and solid — is the point. The drink is transient by design and begins collapsing the moment it is made.

The name means "drowned", which is precise.

Proportions

One single or double espresso over one or two scoops of gelato. Roughly 30-60ml over 80-100g.

More espresso than that produces a coffee soup. Less and the contrast is not established.

Gelato specifically

Gelato is churned more slowly than American-style ice cream, incorporating less air, and typically contains less fat.

Both properties matter here. Lower air content means it holds structure longer under hot liquid rather than collapsing into foam. Lower fat means the coffee comes through rather than being muted by cream.

If using ice cream, choose a dense one and expect it to melt faster.

Vanilla, and why quality shows

Vanilla is traditional and it works because vanillin also forms in coffee during roasting — the two share aromatic compounds.

Real vanilla, with visible seeds and a floral, faintly smoky character, interacts with the coffee. Synthetic vanillin gives flat, one-note sweetness that the espresso cannot engage with.

This is the single change that most improves a homemade affogato.

The espresso matters more than people expect

A sweet dessert will flatten a weak or sour shot. Pull a properly extracted espresso — if anything slightly ristretto, for concentration.

A darker, chocolate-leaning roast generally suits an affogato better than a bright, acidic light roast, whose fruit acidity can clash with dairy.

Serving

Chill the glass or bowl. A warm vessel accelerates the collapse.

Pour at the table, in front of whoever is eating it. The first moments are the best part and they do not survive a walk from the kitchen.

Eat immediately, with a spoon rather than a straw.

Variations worth trying

A small amount of amaro, Frangelico or grappa alongside is traditional in parts of Italy. Hazelnut or pistachio gelato works on the same shared-roast logic as vanilla. Chocolate gelato is pleasant but competes rather than complements.
