Cold Brew Coffee Ratio Guide: Concentrate vs Ready-to-Drink
Build cold brew with the right ratio for concentrate or ready-to-drink coffee, then control dilution and storage.
Cold brew is often described as “less acidic” and automatically smooth. The first claim is too broad, and the second can hide a major variable: concentration. A ready-to-drink cold brew and a concentrate may use very different ratios, yet both can be called cold brew. The only reliable way to reproduce one is to specify coffee dose, water amount, steep time, filtration and final dilution.
Cold brew is defined by long, cool extraction—not by a fixed strength. Learn the practical difference between ready-to-drink and concentrate ratios, dilution and food safety.
Start with the variable that actually changes the cup
Cool water extracts coffee more slowly than hot water, so cold brew relies on extended contact. The resulting chemistry and sensory balance differ from hot coffee, but acidity is not one simple number and individual stomach tolerance cannot be predicted from a label. Concentrate should be treated as an intermediate product: dilute it to the strength you actually enjoy. A dependable cup is not made by copying one number off a recipe card. It is made by changing one input at a time, tasting the result, and keeping a short note.
When a result is confusing, separate strength from extraction. Strength is how concentrated the finished drink is. Extraction is how much soluble material the water actually removed. A cup can be strong and under-extracted, or light and over-extracted — which is why adding more coffee or more leaf so often fails to fix a cup that tastes harsh or hollow.
The mechanics behind a better result
Choose the product you are making
Ready-to-drink recipes often start around 1 part coffee to 12–16 parts water by weight, while concentrate recipes use far more coffee and are designed for dilution. These are starting ranges, not universal standards. State whether water added after brewing is included in the final ratio.
Grind for clean filtration
A coarse, even grind makes filtering easier and reduces sediment, though overly coarse coffee can taste hollow. Use a paper filter after a mesh filter if you want a cleaner cup and less fine material in the finished brew.
Time and temperature work together
A room-temperature steep and a refrigerator steep do not extract at the same rate. Choose one environment, use a timer and keep it consistent. Longer is not inherently smoother; excessive contact can still produce woody or dry flavours.
Dilution is recipe design
Taste concentrate with water, milk or ice at the way you will serve it. Ice melts, milk changes texture and sparkling water changes perception. A concentrate that tastes harsh neat may become balanced when diluted appropriately.
Concentrate or ready-to-drink, decided before you start
Cold brew recipes disagree wildly because they are answering two different questions. A concentrate is brewed around 1:4 to 1:8 coffee to water and diluted before drinking, typically one part concentrate to one or two parts water or milk. A ready-to-drink brew is made at 1:12 to 1:15 and poured as it is. Both can be correct; a 1:8 recipe drunk undiluted is simply a different drink from the one it was designed to be.
Time substitutes for temperature. Without heat, extraction is slow and selective, so cold brew runs 12 to 24 hours, and the compounds that need heat and agitation — many of the sharp acids and some bitter fractions — largely stay behind. That is why cold brew tastes smooth and low in acidity, and also why it can taste flat and woody if left far too long. A coarse grind matters more here than in hot brewing, because the long contact time will happily over-extract fines that a four-minute brew would never reach.
A repeatable home protocol
- Decide whether you want ready-to-drink coffee or concentrate before measuring.
- Combine coarse-ground coffee and cold water in a clean covered vessel, stirring until all grounds are wet.
- Steep in one chosen temperature environment for a controlled period, then filter thoroughly.
- For concentrate, dilute a small measured portion and record the water or milk added; adjust dilution before changing the base recipe.
- Refrigerate the finished coffee promptly and discard it if it develops off odours, visible spoilage or an unusual appearance.
Note the dose, the water, the time, and the one sensory word that matters most: thin, sour, dry, bitter, muted, floral, heavy or balanced. After three brews those notes are worth more than any memory of whether a cup was “good”.
Taste in a useful order
Taste once the drink has cooled a little. Extreme heat flattens sweetness and aroma and pushes you towards a verdict about temperature rather than flavour. Then name what you notice, because naming it gives the next adjustment a reason. Sour is a citric or yoghurt-like sharpness, usually a sign of incomplete extraction, though it is not a fault in a deliberately bright coffee. Bitter can be pleasant, like cocoa or grapefruit pith, or harsh and burnt. Astringent is the drying, puckering feel that lingers on the gums. Thin means there is not enough body or concentration behind the flavour.

- Comparing caffeine by cup without accounting for concentrate dilution and serving size.
- Claiming a universal acidity reduction or a therapeutic benefit for reflux.
- Leaving prepared cold brew at room temperature for extended storage.
- Using a fine espresso grind and expecting a clean, easy-to-filter result.
How to make the next decision
Make cold brew for its mellow extraction profile and convenient batch format, not for an assumed health claim. Name the final drink: ready-to-drink or concentrate. Once that is clear, ratio, steep time and dilution become straightforward variables rather than a fog of internet recipes.
Keep a brewing guide separate from a health decision. Caffeine content varies substantially between products, doses and preparations, so count every source if you are limiting it. Keep prepared cold brew refrigerated, use clean equipment and follow local food-safety guidance for refrigerated beverages. A sensitive stomach, caffeine sensitivity or reflux deserves individual medical advice rather than a promise based on brewing method.
Build a recipe you can repeat
A single magic number is easy to remember and rarely survives a different bag of coffee. What travels is a small range and a reason for choosing within it. Once a result works, save the whole thing: product, roast or tea style, date opened, dose, water, temperature, time, grinder setting, and any dilution or milk.

Fridge or counter?
Both work and they are not equivalent. Room temperature extracts faster, so a counter brew is usually done in 12 to 16 hours against 18 to 24 in a fridge, and it tends to taste fuller and slightly more acidic. A fridge is the safer default in a warm kitchen, since coffee sitting in water at room temperature for a day is a hospitable environment.
Is cold brew less acidic?
Measurably, though less dramatically than marketing suggests. Cold water extracts fewer of the acids that read as brightness, so it tastes smoother, but pH sits close to hot-brewed coffee and the widely repeated “67 per cent less acid” figure does not hold up. If you avoid coffee for reflux, cold brew may help and is not a treatment.
How long does it keep?
Concentrate holds up in the fridge for about a week to ten days before it dulls noticeably; diluted cold brew is best within two or three days. Milk-based versions should be treated like any other dairy drink and finished quickly.
