Coffee Terroir: How Altitude, Soil and Climate Make Single Origins Taste Different
Understand coffee terroir — the combination of altitude, soil, climate and farming practices that makes single-origin coffees distinctive.
Terroir is a concept borrowed from wine that describes how the combination of environmental factors — soil, climate, altitude, topography — shapes the character of an agricultural product. In coffee, terroir is more complex than the simple origin label suggests. Two farms in the same region, at the same altitude, with the same cultivar, can produce noticeably different cups because of variations in soil, microclimate, exposure and farming practices. Conversely, two coffees from very different parts of the world can share characteristics when the underlying environmental conditions are similar.
Understanding terroir matters because it explains why "Ethiopian coffee" and "Kenyan coffee" and "Colombian coffee" are not interchangeable. The variation within each country is significant, and the variation between countries is real but not absolute. Purchasing decisions that treat origin as a complete description rather than a starting framework miss much of what is interesting about specialty coffee.
The principle behind coffee terroir
Coffee terroir is shaped by altitude, soil, climate, cultivar and farming practice. Altitude is the most important single variable — higher altitude means slower ripening, more concentrated sugars and acids, and more complex flavour. Soil contributes mineral nutrients that affect plant metabolism. Climate affects the timing and speed of ripening. Cultivar determines the genetic potential. Farming practice (shade, fertilisation, pruning) determines how well that genetic potential is realised.
An origin name is a starting point, not a flavour guarantee. Variety, altitude, how the cherry was processed, how far it was roasted and how you brew it all move the cup further than the country on the bag does. Treat regional character as a tendency worth knowing rather than a promise the producer made.
What most changes the result
Altitude
Higher altitude means cooler temperatures, which slow cherry ripening and extend the maturation period. The extended maturation concentrates sugars and acids, producing more complex, more acidic coffees. Below 1,000 metres, ripening is faster and the cup tends toward simpler, fuller-bodied, less complex profiles. Premium specialty coffees are typically grown above 1,200 metres, with the most prized lots above 1,700 metres.
Soil
Volcanic soils, rich in potassium, phosphorus and other minerals, support vigorous plant growth and contribute to cup complexity. Soils derived from limestone or schist produce different mineral profiles. The soil pH affects nutrient availability and plant metabolism.
Climate
Rainfall, temperature variation between day and night, and humidity all affect cherry development. High day-night temperature variation (above 10 °C) correlates with more complex cups. Excessive rainfall can dilute flavour; drought stress can produce more concentrated but sometimes harsh cups.
Cultivar
Within a region, different cultivars produce different cups. Bourbon and Typica tend toward sweetness and complexity; Caturra and Catuaí toward balance and body; Geisha toward floral, tea-like delicacy. Local heirloom varieties (especially in Ethiopia) produce a wide range of flavour profiles that are still being catalogued.
Farming practice
Shade, fertilisation, pruning, pest management and harvest timing all influence the final cup. Organic farming does not automatically produce better coffee, but it often correlates with more diverse shade canopies, which can moderate microclimate and contribute to flavour complexity.
Processing
The interaction of terroir with processing method is significant. Washed processing tends to emphasise the bean's intrinsic character, while natural processing adds fermentation character that can either complement or mask the terroir.
A repeatable starting method
- Buy two lots from the same country, region, and processing method, but from different farms. Brew them side by side to understand how terroir varies within a region.
- Buy two lots from the same producer at different altitudes (if available) and taste the difference. Higher altitude should produce more acidity and complexity.
- Buy the same cultivar from two different countries and taste the difference. Caturra from Colombia versus Caturra from Costa Rica should show the influence of terroir.
- Take notes on each cup with the same structure: acidity, body, sweetness, aroma, aftertaste, and any specific flavour descriptors. Over time, patterns emerge that help you understand your own terroir preferences.
- Visit coffee farms when you can. Direct observation of the growing conditions, processing facilities and people who produce the coffee adds depth to your understanding that cupping alone cannot provide.
Keep the bag in front of you while you taste: producer, region, process, roast date. Origin character is only legible once you can tell it apart from roast level and freshness, and that means recording all three.

When it goes wrong
- Barely any flavour — Too little material, or not covered Use more, and cover the mug while it steeps.
- Tastes flat — Old stock Dried botanicals fade after about a year. Check the smell before brewing.
Worth knowing: Individuals with severe Acid Reflux (GERD) due to high titratable acidity.
Common mistakes
- Treating origin as a complete flavour description. Two Ethiopian coffees can taste very different; two Kenyan coffees can taste very different. Origin is a starting framework, not a guarantee.
- Confusing cultivar with terroir. A Geisha from Panama and a Geisha from Colombia share cultivar but not terroir; they taste different.
- Over-paying for origin alone. Some producers exploit origin prestige to charge premiums for mediocre quality. Cup score is a better indicator of cup quality than origin name alone.
- Ignoring processing. A washed Ethiopian and a natural Ethiopian from the same farm taste very different. Processing is part of the terroir equation.
How to choose your next adjustment
Use terroir as a framework for understanding coffee diversity. Recognise that altitude is the most important single variable, that soil and climate contribute meaningfully, and that processing interacts with all of these. Purchase with attention to as many variables as possible — region, altitude, cultivar, processing — for the most accurate assessment of what you are buying.
One caveat on caffeine: it varies with species, dose and serving size rather than with origin or roast colour. A dark roast is not a stronger cup, and a famous region is not a stronger one either.
