The Specialty Coffee Association has refined a protocol that produces consistent, comparable results across cuppers, regions and time. Following the protocol does not require expensive equipment, and it provides a structured way to assess coffee that improves both purchasing decisions and palate development over time.
The SCA protocol is not the only cupping method in use, but it is the most widely adopted and the most useful for cross-comparison. Cuppers in different countries using the SCA protocol should produce similar scores for the same coffee, which is the protocol's primary value — it allows quality to be assessed consistently across the supply chain.
The principle behind coffee cupping protocol
Coffee cupping is a controlled tasting method that minimises the variables introduced by the brewer. A standard ratio of 8.25 grams per 150 ml of water (approximately 1:18), a standard grind, a standard temperature and a standard tasting procedure allow cuppers to focus on the coffee itself rather than the brewing. The protocol produces comparable results across different cuppers and different sessions.
An origin name is a starting point, not a flavour guarantee. Variety, altitude, how the cherry was processed, how far it was roasted and how you brew it all move the cup further than the country on the bag does. Treat regional character as a tendency worth knowing rather than a promise the producer made.

Cup samples should be roasted to a consistent medium roast regardless of the bean's intended use, and rested for 8 to 24 hours after roasting before cupping. The standardised roast removes roast-level variation from the evaluation; the rest period allows the beans to degas enough that the cupping score reflects the bean's character rather than its roast recency.
Ratio
8.25 grams of coffee per 150 ml of water (1:18.18). This ratio produces a strong cup that highlights flavour characteristics; it is too strong for normal drinking but is appropriate for evaluation.
Grind
A medium grind slightly coarser than typical pour-over. The grind should be consistent across samples.
Water temperature
93 °C (200 °F) at the time of pouring onto the grounds. The temperature drops during the tasting as the cup cools, producing a temperature gradient that reveals different aspects of the coffee.
Brew time
4 minutes total. The cupper breaks the crust at 4 minutes, then allows the coffee to cool before tasting at multiple temperatures.
A repeatable starting method
- Weigh 8.25 grams of coffee per cup. Use at least three cups per sample to assess consistency.
- Pour 150 ml of 93 °C water over the grounds, ensuring all grounds are wetted. Note the aroma as the crust forms.
- Wait 4 minutes. During this time, the crust forms and the grounds settle.
- Break the crust with a spoon, sniffing the released aroma. This is one of the most informative moments in cupping.
- Slurp the coffee loudly enough to aerosolise it across the palate. Slurping is not theatrical; it ensures the coffee contacts all taste zones.
- Score the coffee on the SCA scale: fragrance/aroma, flavour, aftertaste, acidity, body, balance, uniformity, clean cup, sweetness, defects, overall.
- Cup at multiple temperatures as the coffee cools. Different aspects of the coffee become apparent at different temperatures.
Keep the bag in front of you while you taste: producer, region, process, roast date. Origin character is only legible once you can tell it apart from roast level and freshness, and that means recording all three.
Common mistakes
- Tasting the coffee before it has cooled. Very hot coffee suppresses aroma and produces muted scores; cupping at room temperature would overemphasise acidity. The temperature gradient is part of the protocol.
- Swallowing the coffee. Cupping is not for drinking; the coffee is expectorated.
- Using inappropriate roast levels or insufficient rest. Cup samples should be roasted to a standard medium and rested 8 to 24 hours, not to the intended-use roast level and not within hours of roasting.
- Cupping without adequate palate cleansing. Water and unsalted crackers are appropriate; flavoured foods are not.
How to choose your next adjustment
Use the SCA cupping protocol to evaluate coffee systematically. The protocol produces comparable results across cuppers and is the standard for specialty coffee assessment. Practising cupping with the protocol builds palate and provides a framework for more informed purchasing decisions.
