The principle behind anaerobic coffee processing
Anaerobic processing controls oxygen exposure during fermentation, but flavour outcomes still depend on coffee, producer decisions and roasting.
An origin name is a starting point, not a flavour guarantee. Variety, altitude, how the cherry was processed, how far it was roasted and how you brew it all move the cup further than the country on the bag does. Treat regional character as a tendency worth knowing rather than a promise the producer made.

Cherries ferment in a sealed tank, so carbon dioxide displaces oxygen and a different microbial population takes over. The control is over the environment, not over the flavour outcome directly.
Time and temperature do the work
The same tank at 18°C for 40 hours and at 28°C for 40 hours produces markedly different cups. Producers who publish both numbers are telling you something real.
Why it tastes intense
The volatile compounds these fermentations produce — esters especially — read as tropical fruit, cinnamon or fermented berry. At the far end they read as solventy, and that line is a matter of taste rather than fact.
Brewing them
The intensity can overwhelm a standard recipe. A slightly coarser grind and a slightly lower temperature usually gives the aromatics room without pulling the harsher end.
Shelf life and degassing
Anaerobic lots often degas longer and more vigorously than washed coffee, so a bag that tastes closed at five days can be excellent at fourteen. Give them longer to rest before concluding the roast was wrong.
A repeatable starting method
- Note the published fermentation time and temperature if the roaster gives them.
- Brew at your usual recipe once to establish a reference.
- Go one step coarser and 2–3°C cooler and compare.
- Judge whether the fruit reads as fruit or as solvent, and buy accordingly next time.
Keep the bag in front of you while you taste: producer, region, process, roast date. Origin character is only legible once you can tell it apart from roast level and freshness, and that means recording all three.

- Treating "anaerobic" as a quality grade rather than a process description.
- Assuming every anaerobic lot is intensely fruity; many are subtle.
- Brewing them hot and fine by default, which pushes the fermentation notes toward harshness.
