Rooibos is unusually forgiving, and understanding why explains how to get the most from it.

Almost no tannin

Rooibos contains very low levels of tannins compared with true tea. Tannins produce astringency and, when over-extracted, bitterness.

Their near-absence means rooibos is effectively impossible to over-brew. You can leave it steeping for twenty minutes and it will grow stronger without turning harsh.

That is genuinely unusual and practically liberating: it suits a pot left on a table, a mug forgotten at a desk, or serving to a group at different times.

Use fully boiling water

Unlike green tea, which scorches, or delicate white tea, rooibos wants full boiling water — 100C.

The compounds you are extracting are relatively robust, and cooler water simply under-extracts, producing a thin, faintly dusty cup. This is the most common way people get disappointing rooibos.

Steep longer than you think

Five to eight minutes is a reasonable range, and longer does no harm.

The colour is a poor guide. Rooibos develops deep red quickly while flavour is still building, so a cup that looks ready at two minutes usually is not.

Red and green behave differently

Red (fermented) rooibos is the familiar type — sweet, woody, full-bodied, and the one described above.

Green (unfermented) rooibos is lighter and more delicate, closer in character to a green tea. It benefits from slightly cooler water, around 90C, and a shorter steep of three to five minutes. Treating it like red rooibos flattens it.

Milk, sweetening and extensions

Rooibos takes milk well, and a rooibos latte works because the tea has body without astringency to clash with dairy.

It cold-brews cleanly, needs no adjustment for iced serving, and works as a poaching liquid for fruit or as a base for spiced blends.

Why it is worth having

Caffeine-free with genuine flavour is a rarer combination than it should be. Most caffeine-free options are defined by what they lack; rooibos has real character of its own, and the fact that it is nearly impossible to brew badly makes it the most practical evening option in this catalogue.
