Who should skip it

- very hot water with a long contact time, which tends to over-extract any roast
The thing worth knowing
Roast date matters more than any other number on the bag: coffee tends to taste best from roughly four days to four weeks after roasting. Store it sealed, away from light, heat and moisture.
