Required gear
Step-by-step protocol
- 0:00Warm the pot with hot water and pour it away, so the brewing water does not lose heat to cold ceramic.
- 0:10Add 2.9 g of leaf to the pot or basket, leaving room for it to open.
- 0:20Pour 240 g of water at 80°C over the leaf and cover. Start the timer.
- 2:50Remove the leaf or decant completely. Leaf left in the pot keeps extracting and turns the last cup bitter.

A garden with one address
Because Temi is the only garden in Sikkim, tea from it has an unusually clear origin. Look for the garden's name on the label, and for the season, which affects the flavor.

Origin & Story
Sikkim is a small Himalayan state between Nepal, Bhutan and Tibet, and its tea comes from a single estate. Temi Tea Garden, near Namchi in South Sikkim, was established in 1969 by Palden Thondup Namgyal, the last king of Sikkim, on land that had been a Sherpa village. It covers 177 hectares, about 440 acres, and lies about 20 kilometers from Ravangla and 55 kilometers from Gangtok, the state capital.
Temi is an organic garden. A project to convert it to organic methods began in April 2005 under guidelines from the Swiss Institute for Marketecology, and the garden is inspected every year. It makes about 100 tonnes of tea a year on average, and roughly three-quarters of it is sold at auction in Kolkata, while the rest is sold as packaged tea.
The estate makes its tea by orthodox methods, and it sits among the same Himalayan hills as Darjeeling, with Kanchenjunga above. This green tea is light and aromatic, in the floral, clean-finishing style of the estate's teas. Temi sits on the slopes of Tendong Hill at 4,000 to 7,000 feet, and the cool altitude suits a light cup.
Brew it small and gently, in a small teapot, with water at about 80°C, 3 g of leaf for 240 ml, and a steep of two to three minutes.
