What you need
- 2.9 g loose-leaf green tea
- 240 g filtered water at 80°C
Required gear
Step-by-step protocol
- 0:00Warm the pot with hot water and pour it away, so the brewing water does not lose heat to cold ceramic.
- 0:10Add 2.9 g of leaf to the pot or basket, leaving room for it to open.
- 0:20Pour 240 g of water at 80°C over the leaf and cover. Start the timer.
- 2:50Remove the leaf or decant completely. Leaf left in the pot keeps extracting and turns the last cup bitter.
What it may be good for
A number worth knowing
We list about 30 mg for an 8 oz cup.
Brew it where you can see it
A glass teapot shows the leaves unfurl and lets you stop the steep when the liquor turns a clear, pale gold. A bright mountain tea tastes best before it turns dark.

Origin & Story
Kanchenjunga, about 8,600 meters high, is the third-highest mountain in the world, and its five peaks look down on a ring of tea gardens: in Darjeeling, Sikkim, Kalimpong, Pedong and, on the Nepali side, Ilam, Hile and Taplejung.
Taplejung is the far northeastern district of Nepal and the gateway to Kanchenjunga base camp. Its tea gardens are among the highest in the country, at around 7,300 feet, or about 2,200 meters, and the bushes grow slowly there, with lower yields than lowland tea.
Nepal's tea districts, Ilam, Taplejung, Panchthar and Dhankuta, sit at elevations between 3,000 and 7,500 feet in the eastern Himalayan foothills, and many of the gardens were started by collectives of farmers who pooled their land. Tea writers link a few things to the character of mountain tea like this: the slow-growing China bush of the Himalayas, and north-facing slopes that catch the cool, fresh air coming down from the mountains. The result is a bright, clean cup with a floral edge.
In the cup you find wildflower, meadow herbs, sweet citrus and roasted nuts. Use water at about 80°C and 3 g of leaf for 240 ml in a glass teapot, and steep for two to three minutes.
