Step-by-step protocol

- 0:10Add 2.9 g of leaf to the pot or basket, leaving room for it to open.
- 0:20Pour 240 g of water at 80°C over the leaf and cover. Start the timer.
- 2:50Remove the leaf or decant completely. Leaf left in the pot keeps extracting and turns the last cup bitter.

Origin & Story
Fuzhou, the capital of Fujian Province, is the most important city in making jasmine tea in China, and it has a whole culture around it. In 2014 the FAO recognized the Jasmine and Tea Culture System of Fuzhou City as a Globally Important Agricultural Heritage System.
The craft grew up slowly. The scenting methods matured in the Ming dynasty and reached their height in the Qing, when Fuzhou jasmine tea became tribute tea for the imperial court.
The work happens at night. The most fragrant blossoms are picked in the afternoon, between noon and dusk, and scented with the tea the same night, in layers of alternating flowers and tea that are left for several hours, then thinned out for air and piled again. The spent flowers are picked out and the tea is dried around dawn. The finest grades are scented several times, with accounts ranging from six or seven rounds to nine in the traditional Fuzhou method.
In the cup it is perfumed and smooth: jasmine, a delicate rock-sugar sweetness and fresh leaf. Use water at about 80°C, 3 g of leaf for 240 ml in a glass teapot, and steep for two to three minutes. Pour off every drop, and the leaves can be infused two or three times more.
