Japanese vs Chinese Green Tea: Processing, Flavour and Brewing Philosophy

Japan and China developed green tea processing traditions independently over centuries, and the differences between them reflect deliberate cultural choices rather than technical accidents. Japanese green tea is almost always steamed to halt oxidation immediately after picking; Chinese green tea is typically pan-fired. The steaming approach preserves a greener, more vegetal character with more intact chlorophyll and a brighter colour; the pan-firing approach produces a more toasted, nutty character with Maillard compounds and a yellow-green colour.
The flavour philosophies differ accordingly. Japanese tea culture emphasises umami — the savoury character produced by amino acids, especially L-theanine — through shading and minimal oxidation. Chinese tea culture emphasises aroma and aftertaste — the layered, evolving flavour that develops through multiple short infusions in small vessels. Both traditions have produced world-class teas; the difference is not in quality but in what each tradition considers the goal of brewing.
The principle behind Japanese vs Chinese green tea
The Japanese and Chinese approaches to green tea represent two different theories of what makes green tea valuable: umami and freshness in Japan, aroma and complexity in China. The processing choices (steaming vs pan-firing) reflect these different priorities, and the brewing techniques are designed to bring out the qualities each tradition prizes. Both approaches produce excellent tea; choosing between them is a matter of preference, not superiority.
Leaf, water temperature and contact time interact, so changing one without noting the others tells you very little. Tea also forgives high temperature far less than coffee does: the same leaf that is sweet at 80C can be flatly astringent at 95C. Fix temperature first, then adjust the leaf.

Steaming vs pan-firing
Japanese steaming preserves chlorophyll and produces greener, more vegetal, more umami-rich teas. Chinese pan-firing produces more Maillard reaction compounds and results in nuttier, toastier, more aromatic teas. The processing choice is fundamental; a Japanese-style steamed Longjing would taste completely different from the actual pan-fired Longjing.
Leaf shape and grade
Japanese green teas are typically needle-shaped (sencha, gyokuro) or powdered (matcha). Chinese green teas are typically flat (Longjing), spiral (Bi Luo Chun), curved (Huangshan Maofeng) or hooked (Huoshan Huangya). The shape affects brewing characteristics; flat and curled leaves release flavour differently.
Brewing philosophy
Japanese brewing typically uses more leaf, lower temperature, shorter steeps, and one or two infusions. Chinese brewing typically uses less leaf, higher temperature, multiple short infusions in small vessels. The Chinese approach is closer to Western multiple-infusion practice; the Japanese approach is closer to a single carefully prepared cup.
Flavour priorities
Japanese teas are prized for umami, vegetal notes and the calming effect of L-theanine. Chinese teas are prized for aroma (often described as "chestnut", "orchid", "bean") and a long, evolving aftertaste. Both traditions value freshness; both traditions prize the leaf that represents the harvest year well.
Caffeine and theanine
Japanese shaded teas (gyokuro, matcha) have the highest L-theanine concentrations. Chinese green teas generally have lower L-theanine but similar caffeine content. The ratio of L-theanine to caffeine is higher in Japanese shaded teas, producing a more relaxing caffeine experience.
A repeatable starting method
- Buy a high-grade sencha and a high-grade Longjing. Brew them with each tradition's preferred method: sencha at 70 °C for 60 seconds; Longjing at 80 °C in a glass cup for 2 minutes.
- Taste both and note the differences. The sencha should be more umami and vegetal; the Longjing should be more nutty and aromatic.
- Try the Chinese approach with a Japanese tea and the Japanese approach with a Chinese tea. Both will work, but the results will demonstrate how the brewing method shapes the perception of the tea.
- Decide which approach suits your palate and your drinking style. Japanese single-cup brewing suits a contemplative pause; Chinese multiple-infusion brewing suits a slower shared experience.
- Expand to other teas within each tradition. Japanese: gyokuro, kabusecha, hojicha. Chinese: Bi Luo Chun, Huangshan Maofeng, Tai Ping Hou Kui.
Note the leaf weight, the water temperature, the vessel and the length of each steep separately. Tea changes across infusions, so a single averaged impression hides most of what the leaf actually did.

When it goes wrong
- Bitter and drying — Water too hot, or steeped too long Let the kettle stand longer, and pull the leaf at 2 minutes.
- Tastes of nothing — Not enough leaf Use more leaf rather than a longer steep.

Common mistakes
- Treating one tradition as inherently superior. Both have produced world-class teas over centuries; the differences are cultural, not hierarchical.
- Applying one tradition's brewing parameters to the other's teas. Japanese methods applied to Chinese teas, or vice versa, produce underwhelming results.
- Confusing pan-fired Chinese teas with roasted teas (hojicha, oolong). Pan-firing is a gentle drying step; roasting is a more intense transformation.
- Assuming green tea means the same thing in both traditions. The shared word "green tea" obscures meaningful differences in processing, flavour and brewing philosophy.
How to choose your next adjustment
Approach Japanese and Chinese green tea as two distinct traditions, each with its own brewing philosophy and flavour priorities. Use Japanese methods for Japanese teas (low temperature, short steeps, single cup); use Chinese methods for Chinese teas (slightly higher temperature, multiple short infusions). Appreciate both on their own terms.
One caveat on caffeine: leaf ratio and steep length move it more than the tea type does. Brewing gongfu-style at six times the usual leaf ratio produces a far larger dose per cup than the category figure implies.
