Siphon Coffee: The Vacuum Brewer and Why It Produces a Different Cup
Brew siphon (vacuum) coffee with the two-chamber brewer that uses vapour pressure and vacuum to filter coffee through a controlled extraction.
Siphon coffee — also called vacuum coffee or vac-pot coffee — is one of the most theatrical brewing methods in specialty coffee, and the cup it produces is genuinely distinctive. The brewer consists of two chambers: a lower globe filled with water and an upper chamber that holds the coffee grounds. Heat is applied to the lower chamber, the water vaporises and rises into the upper chamber where it meets the coffee grounds. After a period of immersion, the heat is removed and the cooling vapour creates a vacuum that draws the brewed coffee back through a filter into the lower chamber.
The brewing method produces a cup that is exceptionally clean and aromatic, with a clarity that approaches a paper-filter pour-over but with body and mouthfeel that approach a French press. The combination is unusual and rewarding, though the method is more demanding of time and attention than most other brewing methods.
The principle behind siphon coffee
Siphon's distinctive cup comes from the combination of full immersion brewing and paper filtration. The coffee is brewed by complete immersion in the upper chamber, which extracts evenly and thoroughly, and then filtered through a cloth or paper filter as it returns to the lower chamber. The immersion produces body and complexity; the filtration produces clarity. The result is a cup that combines characteristics of immersion and paper-filter methods.
Three things are easy to confuse here, and separating them saves a lot of wasted coffee. Strength is how concentrated the cup is. Extraction is how much the water pulled out of the grounds. Preference is whether you like the result. A stronger cup is not a better-extracted one, and the recipe a cafe uses is not automatically the recipe your grinder wants.
What most changes the result
Heat source
The heat source affects both the brewing dynamics and the flavour. Alcohol burners produce a steady, moderate heat that allows precise temperature control. Butane burners produce more heat and faster temperature rise. Electric heating elements are the most controllable.
Filter material
Cloth filters produce more body and complexity; paper filters produce more clarity. Most siphon brewers come with a cloth filter, but paper filters (specifically designed for siphon) are available.
Grind size
Medium-coarse is standard for siphon brewing. Too fine a grind produces a slow drawback and over-extraction; too coarse produces a thin, under-extracted cup.
Water temperature and immersion time
The coffee reaches brewing temperature when it rises into the upper chamber, typically around 90–95 °C. Immersion times of 1.5 to 3 minutes are standard.
Coffee selection
Light-to-medium roasted coffees with delicate flavours are particularly suited to siphon brewing. The full immersion extracts a wide range of compounds, which can overwhelm delicate coffees if extraction is not controlled.
A repeatable starting method
- Set up the siphon brewer with the filter in the upper chamber. Fill the lower globe with the appropriate amount of water (typically 350–500 ml).
- Apply heat to the lower globe. As the water heats, it will rise into the upper chamber.
- When the water has risen, add the measured coffee grounds to the upper chamber and stir gently to ensure even wetting.
- Allow the coffee to brew for 1.5 to 3 minutes, depending on the coffee and your preference.
- Remove the heat source. The cooling vapour will create a vacuum that draws the brewed coffee back through the filter into the lower chamber.
- Remove the upper chamber and serve the coffee from the lower globe.
Write down the dose, the water weight, the temperature and the total time, then one honest word for the cup. "Sour", "dry", "thin" and "heavy" are all useful when they describe a specific brew. Change one number and run it again.

When it goes wrong
- Sour or thin — Under-extracted — water passed through too fast Grind a little finer, or pour more slowly.

- It drained very slowly — Grind too fine, or the bed was disturbed Go coarser and avoid pouring hard on to one spot.
Common mistakes
- Using a cracked or chipped globe. Glass siphon globes are fragile and dangerous when broken. Handle with care.
- Letting the coffee over-brew. The immersion is full contact, so over-extraction happens more quickly than in pour-over.
- Using a heat source that is too strong. Excessive heat produces violent boiling and inconsistent extraction.
- Leaving the coffee in the lower globe after the drawdown. The coffee continues to extract in contact with the grounds that have passed through the filter, particularly with cloth filters.
How to choose your next adjustment
Use siphon brewing when you want a cup that combines immersion body with filter clarity, and when you have the time to set up and monitor the brewing. The method is theatrical but produces genuinely different results that are worth the effort for special occasions.
One caveat on caffeine: brewing method and roast colour tell you very little about the dose. A large cold brew can carry several times what a single espresso does. Use the figure for the specific product rather than for the category.
