Pour-Over Variables: Why Your Recipe Sometimes Fails and How to Fix It
Diagnose pour-over problems — sour, bitter, thin, hollow cups — by understanding the variables that most affect the cup.
Pour-over brewing looks deceptively simple — hot water over ground coffee, through a filter, into a cup — but the method has more variables than any other brewing approach. Small changes in grind size, water temperature, pouring pattern, brew time and ratio produce meaningful changes in the cup. When a pour-over goes wrong, identifying which variable caused the problem requires understanding what each variable affects and how they interact.
This guide is a diagnostic framework for pour-over problems. It assumes a basic understanding of the method and focuses on the most common failure modes and their fixes.
The principle behind pour-over variables
Pour-over brewing is the manipulation of grind size, water temperature, pouring pattern, brew time and ratio to extract the desired range of compounds. When the cup is not right, the problem is almost always one of these variables being out of range for the specific coffee. Diagnosing the problem requires tasting the cup, identifying the symptom, and matching it to the most likely cause.
Three things are easy to confuse here, and separating them saves a lot of wasted coffee. Strength is how concentrated the cup is. Extraction is how much the water pulled out of the grounds. Preference is whether you like the result. A stronger cup is not a better-extracted one, and the recipe a cafe uses is not automatically the recipe your grinder wants.
What most changes the result
Sour, thin, hollow cup
Under-extraction. The water did not extract enough of the desirable compounds. Fixes: finer grind, hotter water, slower pour, longer brew time, more contact through bloom and main pour.
Bitter, dry, astringent cup
Over-extraction. The water extracted too many of the undesirable compounds. Fixes: coarser grind, cooler water, faster pour, shorter brew time, less contact.
Sour AND bitter
Uneven extraction. Often a symptom of channeling, uneven bed, or inconsistent pouring. Fixes: more even distribution, more consistent pour, possibly coarser grind to slow flow and allow more even saturation.
Weak, watery cup
Concentration too low. The ratio is too high (too much water for the coffee) or the extraction was insufficient. Fixes: more coffee, less water, finer grind.
Heavy, syrupy cup
Concentration too high or over-extracted. The ratio is too low (too much coffee for the water) or the extraction is excessive. Fixes: more water, less coffee, coarser grind.
Muddy, sediment-heavy cup
Filter issue or excessive fines. The grind produces too many fine particles, or the filter is being bypassed. Fixes: coarser grind, better grinder (fewer fines), proper filter.
A repeatable starting method
- Taste the cup. Identify the dominant symptom: sour, bitter, weak, heavy, muddy.
- Match the symptom to the most likely cause using the diagnostic table above.
- Adjust one variable for the next brew. Changing multiple variables at once prevents you from learning what works.
- Record the adjustment and the result. Over time, your notes become a personal recipe book that reflects your grinder, your water and your palate.
- Be patient. Brewing optimisation is a long game. Small, deliberate adjustments over many brews produce better results than dramatic changes once.
Write down the dose, the water weight, the temperature and the total time, then one honest word for the cup. "Sour", "dry", "thin" and "heavy" are all useful when they describe a specific brew. Change one number and run it again.

When it goes wrong
- Sour or thin — Under-extracted — water passed through too fast Grind a little finer, or pour more slowly.

- It drained very slowly — Grind too fine, or the bed was disturbed Go coarser and avoid pouring hard on to one spot.
Common mistakes
- Adjusting multiple variables at once. This prevents you from learning which variable matters for which problem.
- Treating published recipes as optimal. Recipes are starting points; your grinder, water and palate will produce different results.
- Ignoring the freshness of the coffee. Stale coffee produces cups that cannot be fixed by any recipe adjustment.
- Blaming the brewing method for poor coffee. Some coffees are better suited to other methods. A light-roasted, delicate, floral Ethiopian may be wasted in a French press; a dark-roasted Brazilian may not shine through a V60.

One caveat on caffeine: brewing method and roast colour tell you very little about the dose. A large cold brew can carry several times what a single espresso does. Use the figure for the specific product rather than for the category.
