Coffee Brewing Ratios: From Ristretto to Long Brew, How Ratio Affects Cup

Understand how brewing ratio affects concentration, strength and taste across espresso, pour-over and immersion brewing methods.

The brewing ratio is the relationship between coffee weight and water weight (or yield weight for espresso). Different ratios produce different concentrations in the cup, and the same coffee brewed at different ratios will taste noticeably different. Understanding how ratio affects the cup is one of the most basic but most important brewing skills.

The Specialty Coffee Association has defined reference ratios for different brewing methods: 1:18 for cupping, 1:16 to 1:18 for pour-over, 1:15 for immersion, and 1:2 (dose to yield) for espresso. These are starting points, not laws; the appropriate ratio depends on the coffee, the method and the desired cup.

The principle behind coffee brewing ratios

Brewing ratio determines the concentration of dissolved coffee compounds in the finished cup. Higher coffee-to-water ratios produce stronger, more concentrated cups; lower ratios produce weaker, more dilute cups. The ratio interacts with extraction: a high ratio with low extraction may produce a similar total extraction to a low ratio with high extraction, but the cup characteristics will differ because the timing and balance of compound extraction differ.

Three things are easy to confuse here, and separating them saves a lot of wasted coffee. Strength is how concentrated the cup is. Extraction is how much the water pulled out of the grounds. Preference is whether you like the result. A stronger cup is not a better-extracted one, and the recipe a cafe uses is not automatically the recipe your grinder wants.

What most changes the result

Espresso ratios

Ristretto (1:1 to 1:1.5) is the most concentrated; normale (1:2) is standard; lungo (1:3 to 1:4) is the most dilute. Within these ranges, the same coffee will taste noticeably different.

Pour-over ratios

1:15 produces a more concentrated, fuller-bodied cup; 1:18 produces a lighter, more delicate cup. The 1:16 to 1:17 range is common and balanced.

Immersion ratios

1:15 is standard for French press; 1:12 to 1:18 is possible. Higher ratios produce more concentrated cups; lower ratios produce more dilute cups.

Concentrate ratios

Cold brew concentrates are typically 1:4 to 1:8 (diluted before drinking); ready-to-drink cold brew is 1:10 to 1:16. The concentrate ratio affects the dilution needed for serving.

Ratio and extraction

A high ratio with normal extraction produces a different cup than a low ratio with high extraction, even if the total extraction is similar. The balance of compounds differs because different compounds extract at different rates.

A repeatable starting method

  1. Choose a starting ratio based on your brewing method and preference. 1:16 is a balanced starting point for pour-over; 1:2 is standard for espresso.
  2. Adjust based on the coffee. Light-roasted, delicate coffees often benefit from higher ratios (more dilute) to highlight clarity. Dark-roasted, full-bodied coffees often benefit from lower ratios (more concentrated) to enhance body.
  3. Track the ratio in your notes. Weight-based measurement is more accurate than volume-based measurement.
  4. Taste across ratios to understand your preference. Some people prefer 1:15; others prefer 1:17. The right ratio is a matter of taste.
  5. Consider the serving context. A small cup is appropriate for a 1:15 ratio; a larger cup is appropriate for a 1:17 ratio. The cup size affects the perceived intensity.

Write down the dose, the water weight, the temperature and the total time, then one honest word for the cup. "Sour", "dry", "thin" and "heavy" are all useful when they describe a specific brew. Change one number and run it again.

When it goes wrong

  • Muddy or gritty — Grind too fine for the mesh Go coarser, and skim the foam before plunging.
  • Weak — Not enough coffee, or steeped too briefly Use more coffee rather than steeping longer.
  • Bitter by the second cup — It sat on the grounds Decant the whole pot as soon as you plunge.

Worth knowing: A doppio carries roughly twice a single shot — worth counting if more than one is drunk before noon.

  • Confusing ratio with extraction. Ratio determines concentration; extraction determines how much was dissolved. Both matter, and they are independent variables.
  • Treating ratio as a recipe rule. Ratios are starting points; adjust based on the coffee and your preference.
  • Ignoring the serving context. A 1:15 ratio in a 100 ml cup is different from a 1:15 ratio in a 300 ml cup, even though the concentration is the same.
  • Assuming higher ratios are stronger. Concentration and strength are not the same; extraction matters too.

How to choose your next adjustment

Use brewing ratios as starting points and adjust based on the coffee and your palate. A 1:16 pour-over ratio is balanced; a 1:2 espresso ratio is standard. The right ratio is a matter of personal preference, coffee characteristics and serving context.

One caveat on caffeine: brewing method and roast colour tell you very little about the dose. A large cold brew can carry several times what a single espresso does. Use the figure for the specific product rather than for the category.
