Burr Grinder Guide: Why Conical and Flat Burrs Produce Different Particles
Understand the difference between conical and flat burr grinders, particle distribution, and why grinder choice matters more than brewer choice.
The grinder is the single most influential piece of equipment in any coffee setup. The quality of the grind — particle size distribution, fines percentage, consistency — has more impact on the cup than the brewing method itself. A mediocre brewer with a great grinder produces better coffee than a great brewer with a mediocre grinder. This is one of the most robust findings in specialty coffee, and it is worth understanding why.
The reason is that grinding is the process that exposes the soluble compounds inside coffee cells to water. The more uniform and appropriately sized the particles, the more even and efficient the extraction. Inconsistent grinding produces a mix of fine and coarse particles that extract at different rates, producing a cup that is simultaneously over- and under-extracted. The grinder is therefore the lever that most affects extraction consistency.
The principle behind burr grinder
Grinder quality affects extraction consistency through particle size distribution. A high-quality grinder produces particles that are uniform in size and shape, which extract at the same rate and produce a clean, even cup. A low-quality grinder produces a wide range of particle sizes, with many fines (very small particles that over-extract) and boulders (large particles that under-extract). The result is a cup that is muddy, sour, bitter or all three.
Three things are easy to confuse here, and separating them saves a lot of wasted coffee. Strength is how concentrated the cup is. Extraction is how much the water pulled out of the grounds. Preference is whether you like the result. A stronger cup is not a better-extracted one, and the recipe a cafe uses is not automatically the recipe your grinder wants.
What most changes the result
Burr type
Conical burrs and flat burrs produce different particle distributions. Conical burrs typically produce a wider range of particle sizes with more fines; flat burrs produce a tighter distribution with fewer fines but sometimes more boulders. The difference in cup is small for most brewing methods but can be noticeable for pour-over and espresso.
Burr material
Steel burrs are the most common and produce a wide range of particle sizes. Ceramic burrs are harder and stay sharp longer, producing more consistent grinds over time, but they can be brittle and chip. Coated burrs (titanium, diamond-like carbon) reduce wear and produce more consistent results over the grinder's life.
Burr size
Larger burrs spin at lower RPM to achieve the same grind, producing less heat and more consistent results. Commercial grinders often have larger burrs than home grinders for this reason.
Grind adjustment mechanism
Stepless adjustment (infinitely variable) allows precise grind size changes; stepped adjustment has discrete settings. Espresso typically benefits from stepless adjustment because the optimal grind size is narrow.
Static and retention
Electric grinders can build up static charge that causes coffee grounds to cling to surfaces, reducing the amount that ends up in the brewer. Low-retention grinders minimise this issue.
A repeatable starting method
- Choose a grinder based on your brewing method. Espresso requires a grinder capable of fine adjustment and consistent particle size; pour-over is more forgiving but still benefits from consistency.
- Consider the burr type. Conical burrs are typical for home espresso grinders and produce good results; flat burrs are popular for pour-over.
- Look for grind adjustment range. Some grinders are designed for espresso only; others span the full range from Turkish to French press. Choose based on your brewing methods.
- Clean the burrs regularly. Coffee oils accumulate on burr surfaces and can produce off-flavours. Cleaning every 1–2 weeks is reasonable for daily-use grinders.
- Replace burrs when they become dull. Dull burrs produce more fines and a less consistent grind. Steel burrs typically last 500–1000 kg of coffee before needing replacement; ceramic burrs hold their edge longer but can chip if foreign objects enter the grinder.
Write down the dose, the water weight, the temperature and the total time, then one honest word for the cup. "Sour", "dry", "thin" and "heavy" are all useful when they describe a specific brew. Change one number and run it again.
Common mistakes
- Spending more on the brewer than the grinder. The grinder has more impact on the cup; reverse the budget priority.
- Treating all burr grinders as equivalent. Quality varies enormously; a $200 grinder and a $1000 grinder produce noticeably different particle distributions.
- Ignoring grinder maintenance. Dull or dirty burrs produce off-flavours and inconsistent grinds.
- Choosing a grinder based on aesthetics rather than performance. The grinder should be judged by the grind it produces, not how it looks on the counter.
How to choose your next adjustment
Invest in the grinder before the brewer. Choose a conical or flat burr grinder appropriate to your brewing methods, with sufficient adjustment range and burr size for your needs. Clean and maintain it properly, and replace burrs when they become dull.
One caveat on caffeine: brewing method and roast colour tell you very little about the dose. A large cold brew can carry several times what a single espresso does. Use the figure for the specific product rather than for the category.
