Porcelain Gaiwans: What They Do and What to Look For
A porcelain gaiwan is the most useful single vessel in tea, because it adds nothing of its own to what you brew.
Neutrality is the feature
Porcelain is vitrified and non-porous. It absorbs no oils, retains no aromatics, and carries nothing from yesterday's tea into today's.
That is exactly what you want when assessing an unfamiliar leaf. Unglazed clay conditions over time toward whatever you brew in it, which is a virtue in a dedicated pot and a liability when you want to know what a tea actually tastes like. If you own one brewing vessel, this is the one to own.
What to check when buying
- Rim shape. A flared, everted rim stays cooler and is much easier to hold. This matters more than any other attribute for whether you will actually enjoy using it.
- Lid fit. Snug enough to hold back leaf when tilted, loose enough to adjust the gap for a faster or slower pour.
- Capacity. 100-150ml suits one or two people. Larger vessels are heavy and hot when full.
- Spout formation. The lip should shed the last drop cleanly. A gaiwan that dribbles down its own side is a daily irritation.
- Wall thickness. Thinner walls cool faster, which suits delicate greens; thicker walls hold heat for oolong and pu-erh.
Holding one without burning yourself
Fill to just below the rim, never level with it. Rest thumb and middle finger on opposite sides of the rim, index finger on the lid knob. Tilt so the lid slides to leave a narrow gap, and pour in one confident motion.
Hesitation is what burns people. The rim only gets uncomfortably hot if you hold it there.
Why gongfu brewing needs it
The method uses a high leaf-to-water ratio and very short infusions — often 10 to 30 seconds — repeated many times. Different compounds release at different rates, so each infusion genuinely tastes different from the last.
That only works if the vessel empties completely between steeps. Anything with a basket retains liquid and blurs one infusion into the next. A gaiwan pours dry, so infusion five is infusion five.
Care
Wash with hot water; detergent is unnecessary on a non-porous surface. Tannin staining on the interior is cosmetic and lifts with bicarbonate of soda if it bothers you. Avoid thermal shock — do not pour boiling water into a cold gaiwan straight from a cold cupboard.

Is Porcelain Gaiwans worth the money?
It is worth it if it stabilises a variable you are currently guessing at, and not if it only adds adjustments you will not use consistently. Judge equipment by which physical variable it controls and by how much, rather than by its specification sheet.
What should I upgrade first?
Grind consistency, in almost every case. Uneven particles extract unevenly, producing sourness and bitterness in the same cup, and no brewing technique or better brewer compensates for that.
How do I look after porcelain gaiwans?
Clean on a schedule rather than when residue becomes visible, since retained oils oxidise and flatten every subsequent brew. Descale according to your water hardness, and prefer gear whose wear parts can be replaced.
