Gongfu Brewing: Reading the First Five Steeps
Gongfu brewing uses a high leaf-to-water ratio in a small vessel with very short, repeated infusions. The result is not one cup but a sequence, and the first five steeps are where a tea shows what it is.
The ratio that makes it work
Roughly 5-6g of leaf per 100ml, against about 1g per 100ml for Western brewing. Five or six times the leaf, and correspondingly short contact.
That inversion is the whole method. Because contact time is brief, compounds that release at different rates separate across infusions instead of arriving together.
Rinse first
Pour hot water over the leaf, wait a few seconds, discard.
For compressed teas this washes away dust and begins opening the leaf. For rolled oolongs it starts the unfurling. The first proper infusion is markedly better for it.
Skipping the rinse is the most common reason a first cup disappoints.
A workable timing sequence

These are starting points. Judge by colour: aim for consistent depth of liquor by extending time as the leaf gives less.
Pour completely dry
Leave liquid in the vessel and the leaf keeps extracting, so the next infusion starts over-steeped. Pour until nothing more comes, then tip further.
This is why a gaiwan suits the method — it empties fully, where a pot with an integrated basket retains liquid.
Water temperature by type
Near boiling for oolong, pu-erh and black tea. Well below boiling for green and white, which scorch easily.
What you are actually doing
Not making a stronger cup. You are separating a tea into its components across time, which is why gongfu reveals differences between teas that Western brewing flattens.
A good tea will give eight or more meaningful infusions. A mediocre one flattens by the third, and that is itself a useful quality test — arguably the most honest one available at home.

Roughly 45 mg per typical serving, against about 95 mg for an eight-ounce cup of brewed drip coffee. Actual content varies with dose, temperature and contact time.
Why does my gongfu brewing taste bitter?
Bitterness almost always indicates over-extraction. Shorten the contact time, lower the water temperature slightly, or use a coarser grind or less leaf — changing one variable at a time so you can tell which was responsible.
How should I store it?
Airtight, opaque, cool and dry, away from strongly aromatic foods. Buy quantities you will finish while fresh; freshness affects the cup more than most technique adjustments.
