Troubleshooting
What it may be good for
Caffeine, in numbers
We list about 100 mg for one glass made with 1 tablespoon of instant coffee. Instant coffee carries about 30 to 60 mg of caffeine per teaspoon and brands differ, so a stronger batch carries more.
Only instant works
Brewed coffee and espresso will not whip, however long you try. Use instant coffee, and an electric hand mixer or milk frother if you do not want to whisk for several minutes by hand.
What to watch out for
- Caffeine affects everyone differently. If you are pregnant or nursing, sensitive to caffeine, or have been told to limit it, check with your doctor about how much is right for you.

Origin & Story
Whipped coffee had a short, fast career. The drink comes from Macau, where it was served as whipped coffee. In January 2020 a South Korean actor, Jung Il-woo, tried it in a café in Macau and said it tasted like dalgona, the Korean honeycomb toffee that it resembles in color and flavor. After he talked about it on a television show, the name stuck.
Then the world went into lockdown. People shared the #dalgonacoffeechallenge online, with videos that went viral on TikTok in early March 2020, and the drink became known as the quarantine coffee. It needed only a whisk and things most kitchens already had.
The recipe is easy to remember: equal parts instant coffee, sugar and hot water, whipped until the mixture is thick, glossy and pale tan, and holds stiff peaks. It only works with instant coffee. Instant coffee is made by drying brewed coffee, and that process leaves coffee solids that hold air, and it is not possible to make the foam with ground coffee beans.
The foam goes on top of cold or hot milk. You can stir it in, or sip through the foam first. It is sometimes finished with cocoa, coffee powder, crushed biscuits or honey.
For one glass, whip 1 tablespoon each of instant coffee, sugar and hot water with a hand mixer or milk frother for three to five minutes, until it holds stiff peaks. Fill a glass with ice and about 200 ml of cold milk, and spoon the foam on top.

How much caffeine is in Dalgona Whipped Coffee?
One serving, 8 oz (240 ml) over cold milk, contains approximately 100 mg of caffeine.
What temperature should I use for Dalgona Whipped Coffee?
Instant coffee dissolves in water of almost any temperature, so there is no extraction to get wrong. This drink is made with water at about 90°C (194°F).
How long should Dalgona Whipped Coffee be extracted?
Timing: 3:00-5:00 whipping. Method: Hand Mixer or Milk Frother. Ratio: 1 tbsp each instant coffee, sugar and hot water, over about 200 ml milk. Grind or leaf format: Instant.
Why does my Dalgona Whipped Coffee taste bitter?
With instant coffee there is no extraction to shorten, so bitterness comes from using more coffee than the sugar or milk can balance. Use a little less instant coffee, add sugar to taste, or top the drink up with more milk or cold water.
Where does dalgona coffee come from?
Whipped coffee of this kind comes from Macau. It was renamed dalgona coffee in South Korea in 2020, after an actor said it tasted like dalgona, a Korean honeycomb toffee.
Can you make dalgona coffee with regular coffee?
No. The foam depends on instant coffee, which holds air when whipped with sugar and hot water. Ground coffee and espresso will not form a foam.
Who should avoid Dalgona Whipped Coffee?
Caffeine affects everyone differently. If you are pregnant or nursing, sensitive to caffeine, or have been told to limit it, check with your doctor about how much is right for you.
